Chipotle Black Bean Burger

This black bean burger is one of my favorite recipes to make when Iā€™m craving a burger. I have been a vegetarian for over 12 years so whenever I crave a hearty burger this is my go to! It has taken me many attempts and recipe modifications to find the right one. This black bean burger recipe is so easy to make because all you need is a food processor, a little time and some patience. I love that this burger pairs well with just about any topping, I love that the chipotle gives it a spicy smoky flavor that pairs well with creamy avocado or gooey melty cheese. 

 

 

Black Bean Burgers

Serves: 4

Ingredients:

1 Can of Black Beans, drain and rinsed 

1 Large Carrot, diced

1/2 onion, diced

2 garlic cloves, minced

1/4 cup chopped cilantro

1/3 cup oats

1 large egg, beaten

2 tbsp chipotle peppers, chopped

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

1/2 cup corn

2tbsp oil

In a food processor place black beans, diced carrot, diced onion, garlic clove, oats, eggs, chipotle peppers, cumin, salt and black pepper, and chopped cilantro. Pulse 3-4 times. 

Add corn and pulse another few times.

On a medium skillet heat up 2tbsp of oil.

Round out a large scoop of batter and cook 2-3 minutes. Flip and continue cooking for another 2 minutes. 

Serve on a toasted sesame seed bun and top with your favorite toppings.
